SPICES  AND  FLAVORINGS
Allspice – an aromatic berry used for flavoring cakes, frostings, puddings, soups, jellies, sauces, pickles, chow-
chow, etc.  It is often used with cloves, nutmeg and cinnamon.

Arrow root – a West Indies plant which contains a starch which is very nutritive.  It is easily digested and used in
puddings, cookies and in the diet of those who are recuperating.

Bay leaves – used with soups, stews, beef roasts, gravies, sauces, pickles, etc.

Boteka – a popular leaf seasoning from Mexico.  The whole leaves are used like the bay leaves.  They are great
with steaks and beef roasts.  The cut leaves used as a tea for indigestion and a tonic.  

Canella bark – a very pleasing aromatic bark used as a condiment.  It is often called “white cinnamon” and used
similarly.

Cloves – used in cooking apples, apple pies, ham, spiced fruits, chow-chow, watermelon rind, cucumber and
pickles.

Cayenne – used for barbecues, sauces, pizzas, etc.

Cinnamon – powdered cinnamon used in apple sauce, apple and pumpkin p9ies, cakes, bread, toast, rolls, spiced
fruit, etc.  Whole sticks used in pickling.

Dill – used for pickling, in beef sauce, boiled fish, bean soup, etc.  Young leaves are used for seasoning salads,
also stirred in mayonnaise.

Fennel – used alone or with thyme in flavoring foods.  It is particularly good with baked fish.  Fennel leaves are
used in salads and stirred in mayonnaise.

Garlic – adds a delicious, mild flavor to salads when rubbed on a salad bowl.  Garlic is excellent with pork or beef.  
May be rubbed on meat or small pieces may be inserted.

Ginger – powdered root used in cakes, bread, bakes fruits, relishes, pumpkin pies and spiced pears.

Mace – this is more delicate in flavor than nutmeg.  It is the outer covering of the nutmeg kernel.

Nutmeg – used in baking, spicing fruits, etc.

Paprika – used on eggs, potato salad and many Hungarian dishes.

Peppercorns – one or two berries used with beef, pot roast, corned beef, gravies, in pickling, etc.

St. John’s Bread – a long pod with sweetish honey and nut-like flavored pulp.  Use in the Mediterranean and
Balkan regions for delicious tarts, cookies, and cakes.

Turmeric – powdered roots used as condiment in curry powders and as yellow coloring.  Whole root is used in
pickling.
